What Happens To Blood Sugar After A Meal

The normal sequence

You eat something with carbohydrate in it. Enzymes in the mouth and small intestine break the larger sugars into glucose, which crosses the gut wall into the blood. Blood glucose rises. The pancreas notices and releases insulin. Insulin tells muscle and fat cells to take glucose out of the blood, and tells the liver to stop releasing its own. Blood glucose comes back down.

In someone whose system is working normally that whole cycle takes about two to three hours and the peak is modest.

What changes the size of the peak

• What you ate. Refined carbohydrate arrives fast. Whole grains, legumes and vegetables arrive slowly.
• What you ate it with. Fat, protein and fibre all slow the process down. The same bread with butter and eggs behaves differently from the same bread alone.
• How much you moved. Muscle takes up glucose during and after activity, and a ten minute walk after a meal measurably flattens the peak.
• How you slept. One bad night measurably reduces insulin sensitivity the next day.

Where supplement ingredients claim to act

Broadly in three places. Some, like white mulberry, slow the enzymes that release glucose in the gut, so less arrives at once. Some, like Berberine, act on how cells respond to insulin and on how much glucose the liver releases. Some, like Chromium, are nutrients the normal machinery needs to work properly.

Knowing which of the three a claim belongs to makes it a lot easier to judge. An ingredient that works in the gut has to be there when food is, which is why with a meal appears on so many labels.
